Winemaking Notes: The 2025 Fizzie Sparkling reflects a warm summer followed by an extended autumn ripening period. The extra time on the vine allowed our estate-grown Vidal grapes to develop rich, concentrated sugars while preserving their vibrant acidity.

Crafted using the Charmat method, this sparkling wine underwent a precise partial malolactic fermentation, adding creamy texture and subtle complexity while preserving the bright fruit character of the Vidal. Brilliant pale straw in colour with a lively, persistent mousse, it opens with fresh green apple, white peach and lemon zest, with subtle notes of honeysuckle and a soft brioche-like character.

On the palate, the 2025 Fizzie offers a beautifully textured and complex mouthfeel. Juicy orchard fruit and crisp citrus are balanced by lively effervescence and refreshing acidity, leading to a clean, balanced finish.

Pair it with: Enjoy alongside crispy vegetable tempura with a light soy dipping sauce, fresh oysters with classic mignonette or summer salads with fresh berries, goat cheese and citrus vinaigrette. It also pairs well with artisanal charcuterie featuring salty prosciutto, double-brie and roasted almonds.
